A good general rule is: Incase your blade has larger chips than 1mm up the height of the blade it means that the cutting performance will degrade if the knife is just resharpened, to maintain the cutting performance the knife will need to be thinned down. So please make sure to add the “tip and chip repair “ and the “thinning” . Polishing and etching is for blades that are primarily made out of a san-mai or Damascus steel and will need it after thinning to get them back to its original state .
